I think Paul did not notice the part 'filter... on server side', which
means Inbox subfolders on server, accessible only via IMAP, not POP3,
to the best of my knowledge. This is convenient, but not for you. But
doing filtering on message receive event in client is possible with
Claws Mail, and with POP3, just one (and only, I think) possible
alternative.

What's wrong then with filtering incoming mail into local folders based
on identity of received mail message? Then you can use per-folder
'default from' option as explained above. All this option does is it
sets 'From' mail header for you, what's set here depends on which
folder is opened when you start composing new message.

For me, this is usefull with per-folder option 'Save copy of outgoing
messages into this folder instead of Sent' to keep the whole
conversation in one folder, both your sent mails and responses received
in one place. Just a hint, your usage may differ.

More interesting, for me, would be a screenshot of your folder
structure in Claws Mail, maybe that could better illustrate what you
are using and understand what are you trying to do. This mail client is
possible to use in so many ways that it is just a metter of finding the
one which works for you.
