I usually just change them by editing:

/home/geezer/.claws-mail/menurc

Make a backup of this file first and good idea not to have Claws
running...

Here's what one of them looks like:

(gtk_accel_path "<MainwinActions>/Menu/Tools/Actions/Edit message with Scite" "<Alt>F3")
