The client's IPnumber is gotten by the mail server by virtue of the
mail submission connection/process. You can't control/hide that. The
mail server will likely resolve it and include both the resolved name
and IPnumber is the message headers. This is out of the control of
the mail client. The mail server can select to not publish that
information, but you need to take that up with your MSP.

Webmail and other closed environments (e.g., the gmail mobile device
app) allow the controlling MSP to do all manner of things, including
suppressing client details (IPnumber/TZ, etc) - some do some don't.
Third-party mail clients (e.g., claws) aren't relevant here.
