Not sure about the Notification plugin...
I'm using : 
Configuration > Preferences > Mail Handling > Receiving
and I've activated a "Run command" after automatic and manual checks, to
have some OSD tell me how many messages I've received.

This goes thru a shell script, and I bet you can add some play there too.
