Use of *, / and _ are the traditional methods for emphasis in email, in
pairs, around the word(s) you wish to emphasise.  Where * is used to
indicate bold, / for italics, and _ for underlined text.

If you want to use actual colours, you'll need to install suitable
plugins, if they exist.  Even then, it relies on the recipient having
something that will interpret what you send correctly.
