It's not about using the email address setup for the IMAP account, it's about
choosing the correct account in the Compose window, using the selector.
(Accounts in Claws Mail can re-use email addresses, they don't have to be
unique per account.)

Check the Others tab in the Compose window, if that is set to save a message
on the IMAP server's folder but the message ends getting saved in the
"normal" Sent folder, (by "normal" I assume you mean in your MH mailbox),
then your IMAP's account's folder hierarchy has probably got out of sync with
what's on the server and that folder on the IMAP server that you are trying
to save the message in doesn't exist. Right-click the top-level IMAP mailbox
folder and choose 'Rebuild folder tree'.
