First turn off /View/Show all headers.

Then go to /Configuration/Preferences/Message View/Text Options.

Uncheck 'Display header pane above message view'.

Check the box for 'Display headers in message view', then click its Edit
button and choose the headers that you want displayed by default.

When you want to see all the headers, use /View/Show all headers.
