Ahhh - OK thanks. 

I checked that and thought at first that might be tricky when I have 50
folders..... but it appears you can right click the actual account,
Compose, Default Account, apply to all sub folders.

A bit arseyfacey but fab that this can be configured, even if it is
slightly buried and non obvious!
