View > Show or hide > [x] Column headers

You can either sort by clicks on the column header, e.g. by Subject
ascending, descending , click one or two times or by

View > Sort > ...

Perhaps also useful

View > Thread view

Keep in mind, the column headers might have a side scrollbar and
you can assign a shortcut to each menu entry.
