Please include your OS and which Chinese encoding system you're using.
I'm not sure what I can add, but I use Claws 3.11.1 on Debian Wheezy
set for Japanese, using iBus + Mozc, and have eliminated all of my
encoding problems ... after about three years of experimentation.  I am
aware that certain Japanese encoding systems -- such as ATOK -- will
bleed in Big 5 character sets, and will substitute Chinese new long-form
characters for certain new Japanese / old Taiwanese equivalents if long
+ short form character fonts are also selected. It _may_ be caused by
your choice of language switcher and which of the five, or so, Chinese
keyboard / character emulators you're choosing.
