That depends on the folder you tried to rename.

Select a folder here:

Configuration > Edit accounts > selected account > Receive > Default
Inbox

Sent email is moved to the Sent folder by default, filter all sent
mails to any other folder, if you want to do that.

Did I misunderstand something?

You don't need to   File > Add mailbox   to add a new account, you can
use several accounts using just one mailbox.
