Setting a default key in Claws won't matter. If the correct key can't
be determined then you will presented with the 'select key' dialogue.

Perhaps you're just missing a graphical pinentry package, either
pinentry-gtk or pinentry-qt. 

If installing a graphical pinentry doesn't solve it, then the problem
is in your gpg-agent setup.
