Any chance this is what you're looking for?
  Configuration->Preferences->Message View->Text Options
    [v] Display headers in message view  [/ Edit]

To add other headers, close CM, edit ~/.claws-mail/dispheaderrc and add
the desired header.  Looks like a leading "-" is used to put it into the
hidden category.
