Maybe not the "neatest" solution, but I have mapped Shift-Meta-E to
"Edit Message", and just add it in with something like

Disadvantage is that signed messages loose their validness on the
signature, but then I just delete the signature. I can live with that.

FWIW it is no less clean than using the "Delete Attachments" plugin,
which I use all the time to get rid of company logo's and HTML parts
