I don't know of any way to prevent manually collecting new mail for an 
account, or to prevent choosing this account as the "From" of a mail 
you're compising.

What you can do is stop automatically collecting new mail from this 
account: Configuration / Edit Accounts, and uncheck the G column for 
this account.
